Proscuitto chicken fillets with creamy spinach linguiniJ and I don’t eat pasta that often anymore , so when we do decide to treat ourselves, I make sure that I cook a pasta dish worth all the carb consumption – it has to be absolutely delicious. This dish is a “winner winner chicken pasta dinner”  if I do say so myself.  Juicy roasted prosciutto wrapped chicken fillets, sliced and arranged on a bed of spinach linguini with a hit of cream and lemon.  Sprinkled with grated parmesan and done!  Simple, satisfying and flavourful – all in 20 minutes!

Roasted Chicken Breasts wrapped in Prosciutto on Creamy Spinach Linguini

Ingredients: 

4 free range chicken breast fillets
+- 8 slices prosciutto
4 sprigs of thyme
1 T (15 ml) butter and 1 t (5 ml) olive oil
+- 300 g linguini or wholewheat
200 g baby spinach
+- 250 ml cream
+- 125 ml pasta cooking water
juice and zest of 1 lemon
Salt and pepper to taste

To serve:

Grated parmesan cheese
extra virgin olive oil

Method:

Preheat the oven to 200 °C.

Boil the linguini in salted water until al dente. Reserve some of the cooking water.

Wrap each chicken fillet tightly with sprig of thyme and 2 slices of prosciutto.

Brown the chicken fillets on each side in a pan with the butter and oil. Do not cook through!

Place the sealed chicken on to a greased baking tray and roast for 15 – 20 minutes depending on the size of the fillets. Allow to stand for 5 minutes before slicing.

Meanwhile add the spinach to a pot of hot drained linguini and toss until spinach is wilted, slowly add the cream, cooking water and lemon and heat gently over the heat for a few minutes. Season with salt and lots of black pepper.

Serve the sliced chicken on a bed of linguini. With grated parmesan on the side. Drizzle with grassy olive oil.
