Chai tea ice cubes and almond milkWhilst browsing through Pinterest, I came across inspired flavoured ice cube ideas. One that piqued my interest in particular was Chai Tea Ice Cubes. What a simple yet novel idea, served with ice cold vanilla infused almond milk makes a refreshing yet comforting dairy free autumnal drink. I can imagine serving this as a welcome drink before a spicy curry night or even as an after meal drink to cool down the palate. Better yet, add a shot of amaretto or hazelnut liqueur to make things interesting…Enjoy!

Chai Tea & Honey Ice Cubes with Vanilla Infused Almond Milk

Ingredients:
2 c (500 ml) strong brewed spiced chai tea, cooled to room temperature
750 ml plain almond milk
Honey to taste
1 vanilla pod, seeds exposed

Method:
Sweeten the brewed chai tea with honey to taste. Pour into 2 – 3 ice trays (10 blocks per tray) and freeze for at least 5 hours or overnight until frozen solid.
Meanwhile place the almond milk in a small pot together with the vanilla pod and seeds and heat until warm but not boiling. Allow to infuse for at least 30 minutes before straining and sweeten with honey to taste. Pour into a jug, cover and chill in the fridge until ice cold and ready to use.
Serve ice cubes in pretty glasses or jars and pour almond milk over. Delicious!

If using sweetened almond milk, refrain from adding honey to taste.

I’m not dairy intolerant by any means but the flavour combination intrigued me. It truly is delicious, I enjoy the flavour of almond milk and can safely say that I’ll be experimenting a lot more with it to develop some inspired desserts and dishes.
