bircher muesli with berries and seeds
I’ve taken a liking to Bircher Muesli over the last few years… and this combination really floats my boat.  Rolled oats(not the quick cooking stuff) soaked in apple juice for a few hours together with some cinnamon, orange and lemon zest and dried cranberries. When ready to eat, simply fold Greek (or plain) yoghurt, fresh berries and seeds into the soaked oats and drizzle with honey. Deeeeeeeelish, low GI and super healthy!

Bircher muesli with berries and seeds – the perfect make ahead breakfast

1 ½ c (375 ml) rolled oats
¾ c (180 ml) apple juice
zest of 1 orange and 1 lemon
½ c(125 ml) dried cranberries
1 c(250 ml) plain yoghurt or Greek style
1/3 c ( 80 ml) sunflower seeds
1/3 c (80 ml) pumpkin seeds
1c (250 ml) mixed fresh berries
Honey for drizzling

Place the oats, juice, zest and cranberries in a bowl and soak for at least 6 hours in the fridge. Do this the night before.
Stir in the yoghurt and seeds and gently add the berries.
Serve drizzled with honey.
