I divided my ingredient haul into 3 categories, Simplicity, Proudly South African and Classic. This post is all about Simplicity. The simple use of a few basic ingredients to make something utterly droolworthy.  Camembert, grapes, thyme and fynbos honey. What a beautiful combination.  Roasted grapes are little flavour bombs (with a compote quality) and when served with gooey baked camembert and the addition of thyme and honey, magic happens. The perfect mid-season cheese course.

m_20160906_113022I can’t really call this dish a recipe, it’s just too simple for that.  So here’s what to do:
To roast seedless grapes, drizzle with a little olive oil and honey. Sprinkle with thyme and a little coarse salt. Roast for about 15 minutes at 180 Degrees Celsius. Add the camembert to the same baking tray. Top with sprigs of thyme and a drizzle of olive oil. Roast for 8 – 10 minutes or until gooey when poked with a fork (oh yes!). Serve the cheese and grapes immediately with baguette and more fynbos honey. Enjoy simplicity at its best 🙂
