Confession. I have to say, I have this thing for McDonald’s apple pies. The crispy pastry pockets with a super cinnamon spiced apple pie filling is such a comfort, even when the piping hot filling burns my lips and tongue something ridiculous. They’ve gotten me through many a late night and ”I deserve it” days.  If anything, McD’s apple pies have taught me patience – wait for the damn pies to cool down a bit before shoving in your pie hole. *laughing at myself uncontrollably*

So after dreaming about these pies for nights on end, I thought I’d try my own spin on them. Then I thought, how divine would apple pie spring rolls be? I mean…. YUM!

Popped Red Balloon Productions and I played around in the kitchen recently and filmed the most delish Apple Pie Spring Rolls.  So easy to make and simply divine as is, sprinkled with icing sugar or served as a dessert with ice-cream or custard.  To see our YouTube video, click here.

Here’s the full recipe…

Apple Pie Spring Rolls

5 granny smith or Pink Lady apples, peeled, cored and diced (1cm x 1cm cubes)
125 ml brown sugar
15 ml cinnamon
juice of half  lemon
15 ml custard powder
5 ml caramel or vanilla essence
+- 8 spring roll pastry, thawed out in the fridge
1 egg, beaten (or use a bit of milk)
Icing sugar for sprinkling

Heat a medium pot and add the diced apple, sugar, cinnamon, lemon, custard powder and essence. Give the mixture a good stir after each addition.
Bring to a simmer and cook over low to moderate heat (stirring occasionally) until apples are tender and glazed in a sticky sauce.
Place 2 tablespoons of mixture onto a spring roll pastry sheet and roll up. Use beaten egg to tightly seal spring rolls. Repeat with remaining filling and pastry. See video for technique.
When ready to serve, deep fry in moderately hot oil until golden and crispy.
Drain on a rack to remove excess oil.
Serve sprinkled with icing sugar.
Remember, be patient, let them cool down a bit before noshing… #justsaying
